Santos vacuum coffee makers (siphon brewers) — a classic French design of vacuum/siphon coffee brewing equipment.
• Left: The upper glass globe/carafe from a Santos siphon coffee maker, sitting on its stand — you can see the “Original Santos” branding on the glass.
• Right: The lower glass bowl/flask of a siphon set, sitting in its wire cradle over a spirit burner (the small brass/metal fuel container with a lid, used to heat the water below).
In use, water goes in the bottom globe and gets heated by the burner. As it heats, pressure pushes the water up through a tube into the upper chamber, where it mixes with ground coffee. Once removed from heat, the vacuum pulls the brewed coffee back down through a filter into the lower globe, leaving the grounds behind.
Santos is a well-known French brand (still made today) that dates back to early-to-mid 20th century siphon coffee brewing — a striking, almost lab-equipment-looking way to make coffee that was popular in cafés.
