The plant in the image is Perilla frutescens, commonly known as Shiso, Beefsteak Plant, or Perilla Mint. It is an aromatic herb belonging to the mint family (Lamiaceae), native to the Himalayas and Southeast Asia.
Key characteristics and uses include:
Appearance: Perilla is an upright, bushy annual plant with wrinkled, serrated, broad ovate leaves that are typically medium green, sometimes with a purple tinge, especially on the underside.
Culinary Uses: It is widely used in East Asian and Southeast Asian cuisine, with fresh or pickled leaves used in salads, soups, and as garnishes. The seeds can also be roasted and crushed to extract perilla oil.
Growth Habit: It can grow to 1-3 feet tall and produces small, nettle-like white flowers in late summer and fall.
Varieties: There are different varieties, including Perilla frutescens var. crispa (shiso), which is particularly important in Japanese cuisine, and Perilla frutescens var. frutescens (wild sesame), known for perilla oil.
Other Uses: In some regions, perilla oil is also used as a substitute for linseed oil in wood-finishing products.
