Naturen Brasserie is part of Norrøna House, located in a fantastic historical building from 1862, offering a unique restaurant experience with a spectacular view of the waterfall. The restaurant features an open kitchen, charming fireplace, a capacity for 100 guests and a unique Chambre Separee that can accommodate up to 30 dining guests. Norrøna House encompasses Norrøna’s biggest Flagship store, theater venue, restaurant & Cafe.

About the Position
The Head Chef will work closely with the Food & Beverage Manager, overseeing daily kitchen operations in Naturen Brasserie and, later, in Cafe & Norrøna Venue. The main role will involve establishing and launching evening operations in Naturen Brasserie Restaurant, aligned with Norrøna standards and expectations.
In addition to establishing evening operations, the Norrøna Head Chef will be involved in the Norrøna Lodges projects, planning kitchen operations and building a holistic food concept for all Norrøna’s future and existing venues. The Norrøna Head Chef will have budget and performance responsibilities, along with ensuring a positive working culture for Naturen Brasserie.
Main areas of responsibilities:
Daily operations
- Be responsible for day-to-day operations and be actively involved in operations
Build and develop high-performing service team in Naturen Brasserie that will deliver the high-quality guest experience
- Hold the leading role in recruitment process of new team and on-going recruitment after opening
- Training & development
- Schedule management
- Create & maintain positive working culture
Ensure proper compliance with restaurant hygiene regulations
Suppliers
- Contribute together with Food & Beverage manager to development of a holistic approach with suppliers on the best possible terms for the employer
- On-going follow- up on prices and agreements
- Constantly looking for better deals in order to optimize the cost
Concept
- To develop, the holistic Food concept for Naturen Brasserie and Lodges
Financial KPI
- Have a control over staff cost & beverage cost
- Contribute to budgeting process
- Actively participate in grow-sales strategy
Qualifications:
- Certificate - Culinary Arts Degree
- 5+ years of experience in a head Chef position
- Good references from previous employers
