Head Chef Brasserie Paleo

Brasserie Paleo opened in 2014. Our food philosophy is built on the Paleolithic kitchen, where preprocessed ingredients are avoided, and Nordic ecological produce and seasonal vegetables is at the heart of our cooking.

Our à la carte lunch and dinner is served in a modern brasserie environment, where we also have two unique chambre séparée for private events. We are well known for our extensive wine list and in 2019 we opened a wine bar.

Brasserie Paleo has been awarded with the Plate Michelin the last 3 consecutive years and is also recommended in the White Guide Nordic. Every morning we serve one of Norway's most award-winning breakfast experiences. 

Responsibilities

• Food quality assurance, breakfast, lunch, dinner and events
• Menu planning and concept development
• Daily production, operations and team management
• Training and development of the kitchen team 
• Budget¸ work efficiency, food cost control
• IK Mat/HACCP
• Work closely with F&B Manager and Hotel management team

We are looking for someone who: 

• Wants to develop as a chef and a leader 
• Has a diploma and relevant experience as a Head Chef or Sous Chef
• Finds motivation in producing great guest experiences
• Has strong communicative skills 
• Understands the importance of building strong motivated teams
• Performs and thrives in a hectic working environment.
• Works calm and collective under pressure
• Solves the administrative tasks with a structured approach
