Are you a structured and operational kitchen leader who thrives with both professional responsibility and administrative tasks?
Furukroa is seeking a professional and engaged Head Chef who combines solid culinary expertise with clear leadership and strong system understanding. We are looking for someone who creates structure, ensures compliance with routines and regulations, and leads through active presence in daily operations.
This is a key leadership position with overall responsibility for the kitchen's professional, financial, and operational results. The kitchen team size varies by season, ranging from approximately 5 to 15 employees.

We are looking for someone who

Has solid experience as Head Chef or Sous Chef with leadership responsibility

Is confident in professional and operational kitchen management

Is structured and able to build systems in daily operations

Has strong financial understanding, including food cost control and calculations

Has experience with budgeting and profitability follow-up

Has good knowledge of IK-Mat and HSE regulations

Is skilled in delegation, training and team development

Creates a positive, respectful and structured work environment

Maintains overview and control during busy and seasonal periods

Communicates clearly and collaborates well across departments

Speaks and writes a Scandinavian language in addition to English
Your main responsibilities are
Professional & Operational Leadership

Overall responsibility for daily kitchen operations

Ensure consistent food quality and presentation

Lead actively in production and service

Develop menus in line with concept and profitability
Financial & Inventory Management

Budget responsibility and control of food cost

Calculation of dishes and pricing

Ordering goods, supplier follow-up, and stock control
-
Reduce waste and ensure structured inventory and ordering routines
Internal Control & Compliance (IK-Mat and HMS)

Ensure compliance with food safety regulations (IK-Mat)

Maintain and improve internal control systems
-
Ensure safe working conditions and proper documentation
Team Leadership & Work Environment

Delegate tasks and follow up execution

Train, mentor and develop kitchen team members

Build a structured and respectful work culture

Ensure clear routines and efficient daily systems
