If someone is new to Kullstål on induction I can give a small demonstration. Meaning the buyer can check the pan and clarify the doubts if any.
Buying nicely used saves you few days of frustration till the pan is ready. Buying an unmaintained, unused pan is not a good idea.
Hellstrøm , De Buyer Mineral B : 28 cm (28 cm is sold) , 30 cm. 450 EACH [The bottom is 20 and 23 cm respectively)
De Buyer Carbone Plus : 32 cm (but more like 31, see picture) 450 kroner, bottom is 23 cm, 2 handles for easy lifting.
Garcima: 28 cm, 22 cm (450 for both. 250 + 200). Garcima pans are sold.

All work on induction, ceramic , electric, gas and wood and coal . The handle does not become hot.
All are Lyonnaise. The slant shape helps to glide the food and Sauces out easily. Just bend the pan and give a small push.

Although experienced people will get almost the same results with all the pans but following are my thoughts, though I am neither a chef nor an enthusiast and I dont cook so much. Most of the time I just maintain the pans and that is the reason that I want to sell them now :).
Hellstrøm pans are thick and heavy. When I bought them from Jernia it was advertised that these follow his specifications. They are very ideal for pieces which are not to be stirred or moved so much. Almost like a grill. These pans are not good for finishing the food in a hot-hot oven because, the handle has an epoxy coating which limits the time it can be put in the oven. On the other hand they can take very high temperatures on cook tops. Same size cast iron pan will be much more heavier.
Carbone Plus is good for stir fry or Asian cooking or paella ie cooking the food that needs a more responsive pan... high temperatures followed by medium and low cycles or vice versa. Eg when garlic is brown and you reduce the heat, garlic will not burn. Also this pan can be put in the oven with no restrictions. You can make tandoor dishes and naan brød. No restrictions on temperature or time in the oven except that naturally the handles get hot. The pan is big so one can easily cook for 4. Buy good gloves and use kitchen towels along with them.
Garcima pans are good for those who like to lift the pans and give it a shake. The weight is under 2 kg and handles are longer.
All pans were bought new and now are perfect “burned-in” pans via a process that many food enthusiasts appreciate.
